Knife Handles

What is a good epoxy to use when replacing a knife handle?
I am replacing the handle on an old carbon steel kitchen knife. I have everything ready and all I have left to do is attach the scales. The scales are made out of walnut if that matters…
What is the best epoxy for attaching the scales to the tang?
Greetings,
There is a product made by Loctite that actually meets your criteria. A link to it follows;

You will find it to be dishwasher safe and designed for porous to metal applications.
I hope you find this useful.
