Knife Smooth
Is it easier to cover a circlular cake in fondant or buttercream style icing?
I am making a 2 tier topsy turvy cake for my cousins birthday. I’m not great at fondant, i find it really fiddly to work with and can never seem to get a smooth enough finish (perfectionist!) I imagine it would be easier to use buttercream or something similar and smooth it out with a pallete knife. Would this still create a good finish? And if so what is the best way to go about it?
For a topsy turvy cake fondant would give a much nicer finish. No matter how careful or how much of a perfectionist you are, butter cream seldom gives that smoooooth finish. Fondant takes practice, but is so rewarding. Crumb coating with butter cream is indeed the hot tip. Also, see if you have a very flat,wide (2″ or so), smooth tool or implement you can use to smooth and “polish” the surface once you have placed and trimmed the fondant on the cake. Lay it flat to the surface and using a small circular motion, move continuously over surface.Such a tool will smooth out small wrinkles and cracks and give as smooth a surface as possible.
