What is better out of the two knives, Hiromoto 210mm chefs knife or a Global 8″ chefs knife?
I have to vote for Henckel knives as well. They are top of the line. I own a complete set, and have NEVER had a problem in 15 years. Easy to sharpen as well. Blaire, you have good taste in knives. FYI: no matter what brand you chose never put them in a dishwasher.
