What is the best steel for making knives?
Please give me the name of the steel, and the percentage of materials from what It consists, if you can give me five types of steel it will be better so I can decide. Thanks.
Without specifying designed use of the knife it is impossible to choose anything.
Steels used in large, heavy duty knives have very different properties compared to steels better suited in light use cutters.
Corrosion resistance adds another dimension. E.g 440A is generally considered really low end for knives, but in saltwater or highly acidic conditions it’ll outperform carbon steels.
Heat treatment can change a lot of properties, including corrosion resistance.
Also, many premium steels show their advantages when sharpened to thin edges, otherwise, there is not much to gain from them when using really think 20 deg per side edges.
Even edge polish level can affect steel performance, like 52100 with polished edge could perform better for push cutting than CPM 10V which is super high wear resistant steel.

In the end, there’s no one best steel, not even 5. It all depends on the knife design, use, edge thickness, what you cut, etc…
